Full disclosure, I don't mind Spam. Maybe once every couple of years. But it has to be fried.  I'm talking crispy-black kinda fried. I'm pretty sure I currently have a can in my cupboard that's been there from a previous decade. I'm also pretty sure IT DOESN'T HAVE FIGS IN IT!

Like so many old-timey holiday dishes, figgy pudding has traditionally been made with suet. Sure beef fat isn't the first ingredient I'd consider for pudding, but who knew gelatin was made from cow parts?

Gelatin is made from animal collagen — a protein that makes up connective tissues, such as skin, tendons, ligaments, and bones. The hides and bones of certain animals — often cows and pigs — are boiled, dried, treated with a strong acid or base, and finally filtered until the collagen is extracted.
