Zucchini? 3 No Fail Uses For That Abundant Garden Veggie
If you've ever grown zucchini or have a friend/family member grow said plant, you know that there is always more than one household could ever consume! It's that vegetable that is gifted to every neighbor and stranger. Well, we feel your pain on what to do with all that extra zucchini so one doesn't feel guilty!
1. Chocolate Zucchini Cake

Need a little more of a nudge, this No-Fail recipe has only 3 ingredients meaning... You're going to love us... You more than likely won't even have to make a quick dash to the store! For ingredients, all that is needed is 1 box of your favorite chocolate cake mix, 2 eggs, and 1.5 - 2 cups of lightly packed shredded zucchini! See - we told you it would be easy! Mix all three together until well blended, pour into a cake pan shape of your choice, and bake in a pre-heated oven at 350 degrees for 45 minutes or until the toothpick test comes out clean!
2. Marinated Zucchini Chips
We all love pickles and green olives, but why can't zucchini be part of the fun! Leave the zucchini raw and slice it thin. Marinate overnight in a sealed container mixing the zucchini in pesto or any type of vinaigrette. Add in pieces of bell pepper or garlic for added fun. Use the next day as a topping for a flatbread spread with herbed cream cheese for example. Red onion and arugula go well with it too!
3. Zucchini Hashbrowns
Who doesn't love hashbrowns! But are you wanting to watch the carbs and still get that breakfast fix, then give this version a try. Shred the zucchini and mix with a beaten egg, 1-2 tbsp of flour, and then fun spices like smoked paprika, cumin, and coriander. Toss into a shallow frying pan with a little extra virgin olive oil, salt and pepper while frying, being sure to flip once golden brown. EASY!
